Frozen summer berries with hot chocolate sauceThis recipe for frozen summer berries with hot white chocolate sauce takes a grand total of 10 minutes to make* and yet is as fabulous as a good restaurant dessert. 

You may have noticed that most of our recipes are pretty simple to make. We’re not into fussy cooking and let’s face it, we have a farm to run. This recipe must be the simplest dessert recipe that we’ve tried so far – and yet is fit to serve at a dinner party.

The dish calls for fresh fruit, which is then frozen briefly. You can also make it with fruit that you’ve frozen earlier in the year.

The recipe was developed for us by award-winning chef, and cookery workshop teacher, Bryan Beattie.

*It takes just 10 minutes to make – with a hour-long break in the middle.

Ingredients for frozen summer berries with hot white chocolate sauce

Serves six

  • 1kg summer berries, such as raspberries, strawberries, redcurrant and blackcurrants
  • 100g high quality white chocolate, broken into small pieces
  • 250ml double cream
  • Powdered or flaked chocolate, for decoration

Directions

  1. Spread out the berries in a single layer on a baking tray and freeze for 1 hour.
  2. About five minutes before when you’d like to serve dessert, put the chocolate and double cream into a pan, and melt together over a medium heat, stirring regularly.
  3. Divide the frozen berries between 6 bowls, and pour the hot chocolate sauce over the fruit.
  4. Sprinkle with chocolate powder or flakes, to decorate, and serve immediately.
