One-minute strawberry ice cream

Homemade strawberry ice cream is delectable but labour intensive if you don’t have an ice cream maker. This ingenious Jamie Oliver recipe lets you create the most delicious strawberry frozen delight in just one minute.

Jamie Oliver suggests using fat-free greek yoghurt, which makes this a super healthy frozen yoghurt, particularly as the only added sugar comes from a dash of honey. We tested the recipe with crème fraîche from the farm shop, which made it rich and creamy.

The recipe calls for frozen strawberries, which makes this perfect for any season. Stock up the freezer with all your extra picked fruit (make sure to remove green hulls before freezing), or call into the farm shop to buy some already frozen, all year round.

Jamie also suggests serving the ice cream by rolling it in shortbread crumbs or with meringues and a dash of balsamic vinegar. We couldn’t wait that long and scoffed it down just as it is!

  • 500 g frozen strawberries
  • 250 ml natural fat-free greek yoghurt, or crème fraîche
  • 1 tablespoon runny honey
  • a few sprigs of fresh mint leaves, plus extra for decoration
  • a splash of Pimms (optional)
  1. Put the serving bowls in the freezer, and get all your ingredients and equipment ready before you start – the ice cream melts pretty quickly so you need to be prepared. 
  2. Put all the ingredients in a food mixer and whizz together until smooth.
  3. Serve immediately, garnishing with the extra sprigs of mint.
